Ingredients for Turkish spinach borek (roll pastry) recipe are listed below. You can also prepare the pastry with minced meat, feta or potato fillings.

  • 4 filo pastries

For the filling:

  • 700 g spinach
  • 1 large onion (chopped)
  • 4-5 tablespoons of oil
  • 1 teaspoon of red pepper flakes
  • 1 teaspoon of black pepper
  • Enough salt

For the sauce:

  •  Half a water glass of milk
  • 2/3 water glass of oil
  • 2 tablespoons of flour
  • 1 tablespoon of vinegar

For the top:

  • 1 egg yolk
  • Poppy/Sesame seeds/Black cumin

How to make Turkish spinach borek (roll pastry)?

1.To make the Turkish spinach borek recipe, firstly prepare the filling of the pastry. For this, chop the spinach, wash it well and leave it to drain.

2.Put oil to a pan and heat. Add chopped onion on it and sautée. Then, add spinach and spices. Sautée spinach a little on high heat, do not need to cook it much. Next, let the filling cool.

3.For the sauce, combine milk, oil, flour and vinegar in a bowl and mix.

4.Spread filo pastry on the counter, and spread the sauce on  it with a brush. Divide it into four equal parts, put the filling to the wide part and roll it towards the triangle part, then roll it again Do the same for all filo pastry.

5.Apply egg yolk and sprinkle poppy, sesame or black cumin on the borek.

6.Bake 200-degree oven until golden brown.
