INGREDIENTS

Ingredients for the Turkish borek with minced meat recipe (tandoori pastry) are listed below:

  •  1 water glass of water
  • 1 water glass of milk
  • Half a water glass of yogurt
  • Half a water glass of oil
  • 1 dessert spoon of instant yeast
  • 1 tablespoon of vinegar
  • 1 and a half dessert spoons of salt
  • 5 water glasses of flour (add gradually)

For the stuffing:

  • 2 large onions
  • 400 grams of minced meat
  • Salt
  • Black pepper
  • Red chili pepper

To grease the meringues:

  •  3-4 tablespoons of butter
  •  Half a tea glass of oil

For the top:

  •  Egg yolk
  • Sesame
  • Black cumin

How to make Turkish borek (tandoori pastry)?

  1. To make the Turkish borek recipe, first of all, for the stuffing, fry chopped onion in a little oil, add minced meat, and cook it well. Add salt and spices and mix, and then let it cool.
  2. Melt butter and add oil and mix.
  3. For the dough, take the other ingredients, except flour, into a kneading bowl and mix. Add flour gradually and knead well, get a soft dough.
  4. Next, lightly flour the dough, divide it into two meringues and roll them. Open, grease them with the oil-butter mixture, and cut them as in the video. Put them in a freezer bag and rest them in the refrigerator for 1 hour.
  5. Flour the counter, and roll out the first rested meringue with a rolling pin to the size of the baking tray.
  6. Lay the baking paper on the tray and then place the first meringue you opened. Next, place the stuffing.
  7. Open the other meringue, put it on the stuffing neatly and close the edges by pressing with your fingers. 
  8. Slice the borek. Then, spread egg yolk and sprinkle sesame and black cumin seeds on it.
  9. If you have time, rest the pastry for 15-20 minutes.  
  10. Bake in a preheated 180° upside-down fan oven until golden brown.
