INGREDIENTS

Ingredients for the stuffed eggplant recipe are listed below:

  • 1 kg of eggplant (5-6 pieces)
  • 200 gr. minced meat
  • 6 Tablespoons of olive oil
  • 1 onion
  • 2 medium size tomatoes
  • 3 cloves of garlic
  • 1 tea glass of rice
  • 1 tablespoon of tomato paste (for the inside)
  • 1 dessert spoon of pepper paste
  • 1 teaspoon of black pepper
  • 1 teaspoon red chili pepper
  • 1 dessert spoon of mint
  • 1 dessert spoon of salt
  • Half a Bunch Parsley
  • Half a glass of water

For the sauce:

  • 2 water glasses of hot water
  • 1 dessert spoon of tomato paste
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt

How to make stuffed eggplant:

  1. To make the stuffed eggplant recipe, firstly, wash eggplants well and cut them in half. If your eggplants are large, you can also divide them into three pieces.
  2. With the help of a dessert spoon, carve the inside of the eggplants well. Soak them in salty water for 20-25 minutes and drain.
  3. For the stuffing, wash the rice well. Chop onion and garlic. Finely chop parsley and grate tomatoes. Mix all the ingredients well in a deep bowl.
  4. Fill the eggplants with this stuffing and place them in the pot.
  5. For the sauce, dilute tomato paste with water and add salt and oil into it and mix well.
  6. Pour this sauce into the pot. Close the lid and cook the dish on low heat for 50 minutes.

The stuffed eggplant recipe is ready.
