  • 4 cloves of garlic
  • 5 tablespoons of olive oil
  • 1 medium onion
  • 2 tablespoons of flour
  • 2 water glasses of chicken stock
  • 2 water glasses of water
  • 1 tablespoon of pepper paste
  • 1 teaspoon of red pepper powder
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper

How to make roasted tomato soup?

  1. To make the roasted soup recipe, firstly, wash tomatoes and cut in half without peeling their skins. Place on a baking tray lined with baking paper.
  2. Then, drizzle olive oil on them and bake in a preheated 180-degree oven for 30 minutes. Meanwhile, 15 minutes later, add garlic cloves and diced onion into tomatoes, and continue cooking.
  3. After 30 minutes, remove the tomatoes from the oven and peel the skins off. Then, crush the baked garlic cloves.
  4. Put some butter (or olive oil to your preference) into a pot and melt. Add flour and fry until it smells. Add roasted tomatoes, crushed garlic cloves, and onions, fry a little more. Then, add pepper paste and stir.
  5. Next, add water, chicken stock, and salt, and mix again. Cook the soup until tomatoes are completely dissolved. Finally, add spices. When the soup starts to gain consistency, take it from the stove. Puree the soup with a blender until smooth.
  6. Boil the soup for 1-2 minutes and turn off the stove. Serve it with grated cheddar upon request.
