Karniyarik Turkish Stuffed Eggplant Recipe

The karniyarik recipe is one of the flavors inherited from Ottomans to Turkish cuisine. You should definitely try this delicious dish that appeals not only to the stomach but also to the eyes. You can serve karniyarik with rice pilaf and cacik.

Ingredients for the karniyarik recipe are listed below:

  • 6 small eggplants
  • 3 green peppers

For the filling:

  • 2 medium onions
  • 2 tomatoes
  • 2 bell peppers
  • 2 cloves of garlic
  • Oil
  • Salt
  • Black pepper
  • Red pepper powder
  • 200 g ground beef 
  • 1 tea glass of hot water

For the sauce:

  • 1 tablespoon tomato paste
  • 1 water glass of hot water

How to make karniyarik?

  1. To make the karniyarik recipe, firstly, peel the eggplants in stripes and leave them in salted water for half an hour so that they do not absorb oil.
  2. After washing them well, dry with a towel and fry them in a little oil. Also, fry 3 peppers in this oil.
  3. Then saute the chopped onions in some oil in a pan, add the ground beef and fry for a while, add the chopped peppers and garlic and fry for 2 more minutes.
  4. Next, add tomatoes you cut into cubes, salt, and spices and mix.
  5. Finally, add a tea glass of water and cook the filling for 5 minutes.
  6. Cut the middles of the fried eggplants that you placed on the tray and stuff them with filling.
  7. Divide the cherry tomato in half or 1 tomato in equal sizes and place tomato pieces and peppers on the stuffing.
  8. In a separate bowl, dilute 1 spoonful of tomato paste in 1 glass of hot water and pour this over the meal.
  9. Then bake the meal for 20-25 minutes at 170-degree oven.
