Hünkar Begendi is a meal with a distinct flavor that dates back to Ottoman times. This meal was first tested in 1867 during the reign of Ottoman Sultan Abdulaziz. It was given the name "Hunkar Begendi" because the sultan liked its taste very much. The ingredients for this dish are listed below:

  • 400-450 grams of beef (or lamb beef)
  • 2 tablespoons of oil
  • 1 tablespoon of butter
  • 1 onion
  • 2 cloves of garlic
  • 3 green peppers
  • 1 small red capia pepper
  • Half a tablespoon of tomato paste
  • Half a tablespoon of pepper paste
  • 2 tomatoes
  • 1 water glass of hot water
  • 1 teaspoon of salt
  • Half a teaspoon of black pepper
  • 1 teaspoon red chili powder

For the ‘Begendi’:

  • 2 eggplants
  • 1 tablespoon of butter
  • 1 tablespoon of flour
  • 1 water glass of milk
  • 1 small bowl of mozzarella or cheddar cheese
  • 1-1 and a half teaspoons of salt
  • Half a teaspoon of black pepper

How to make Hunkar Begendi?

  1. To make the Hunkar Begendi recipe, first prepare lamb stew. Firstly, chop the beef into cubes. Cook them until they release their juice and absorb it again. Then drizzle oil, add chopped onions and garlic, and mix.
  2. When onions and garlic soften, add butter and melt it. Then add the chopped tomatoes, green and red peppers.
  3. After the peppers soften, add the tomato and pepper paste.
  4. Finally, add hot water, salt, and spices and mix.
  5. On the other hand, prepare the ‘Begendi’ of the dish. First, roast eggplants and chop them finely.
  6. Melt butter in a pan, fry flour for a while. Then add milk and mix.
  7. After that, add roasted and chopped eggplants and mix again. Next, add salt and black pepper. Finally, add the grated cheddar cheese/mozzarella cheese and stir. Turn off the stove when the cheese is melted.
  8. Put first the ‘Begendi’ on the serving plate by spreading it. Then, place the lamb stew on it.
