Artichokes with broad beans meal is the perfect choice for those looking for a distinct flavor. It is consumed cold like other olive oil dishes. Turkish cuisine is usually famous in the world with meat dishes. However, the Aegean Region of Turkey, in particular, is a place where olive oil meals are commonly prepared and consumed. In Turkey, artichokes are sold in the market as peeled. Peeled artichokes are kept in lemon water and sold as such. If you do not have the opportunity to buy it peeled, rub them with lemon so that they do not darken after peeling, or soak them in lemon water for a while. The ingredients for the Turkish artichoke with broad beans recipe are given below:

  • 4-5 artichokes
  • A handful of  broad beans
  • 1 onion
  • 1 dessert spoon of flour
  • Juice of 1 lemon (use half if you don't like sour)
  • Juice of half an orange (or 1 tangerine)
  • Salt
  • Sugar
  • 1 tea glass of water
  • Lots of olive oil

How to cook artichokes with broad beans?

  1. To prepare artichokes with broad beans recipe, firstly scratch broad beans with a knife and peel them off.
  2. Place chopped onions, artichokes, peeled broad beans, salt, sliced lemon peels, and sugar respectively into a pan.
  3. Combine the lemon juice, orange juice, and flour in a bowl and pour over the artichokes.
  4. Then add water and plenty of olive oil. Cook the meal with the lid half closed on low heat.
  5. Turn off the stove when artichokes and broad beans soften. Then, let the meal rest until it cools.
  6. Finally, take the meal to a serving plate and sprinkle chopped dill on it.
  7. Artichokes with Broad Beans recipe is ready.
