If you are looking for a healthy, light and satisfying appetizer on summer days, this recipe is just for you. Those who do not like zucchini will love it with this recipe. There are a few points to consider when preparing this delicious appetizer with carrots and zucchini. If you cook the zucchini and carrots lightly and wait for them to cool after cooking, you will prevent the appetizer from getting watery. On the other hand, we served the appetizer with mint in this time. You can also serve it by adding chopped dill both inside and on it. Ingredients for the carrot zucchini tarator recipe are listed below:

  •  2 carrots (grated)
  • 2 zucchini (grated)
  • 5-6 tablespoons of strained yogurt
  • 2 cloves of garlic (grated or chopped)
  • Oil
  • Salt

For the top:

  •  Cracked walnuts
  • 1 tablespoon of butter (or oil)
  • Red pepper powder

 How to make a healthy appetizer: Carrot zucchini tarator?

  1. To make the carrot zucchini tarator recipe, firstly, peel and grate zucchini and carrots.
  2. In a large pan, sauté grated carrots first in oil, then grated zucchini.
  3. While roasting the mixture, add grated or finely chopped garlic and cook for a while. After cooking, let the mixture cool.
  4. Next, mix yogurt and salt. Pour it over the cooled carrot-zucchini mixture. Then, take it to the serving plate.
  5. For the top, melt butter (or heat oil), add red pepper powder and crushed walnuts in it and fry a little. Pour this sauce over the tarator.
  6. Serve with mint.
